Spoon and level your flour
Spoon flour into the measuring cup, then sweep the top flat with a knife. Scooping with the cup packs in extra flour and makes things dry.
Ovens fib a little
Most ovens run a bit hot or cold. Start checking at the low end of the bake time, and trust how it looks over what the clock says.
Read to the end first
Skim every step before you begin. Then nothing surprises you, like a dough that needs an hour to rise.
